Wild Garlic Pesto Pastry Twists Recipe

METHOD
Step 1.
Preheat your oven to 180°C (350°F, gas mark 4). Line a baking sheet with parchment paper.Step 2.
In a food processor, blend together 100g of wild garlic leaves, 50g of grated Parmesan, 50ml of olive oil, 30g of pine nuts, and a pinch of salt and pepper until they form a coarse pesto. Taste and adjust seasoning as required.Step 3.
Roll out 1 sheet of puff pastry on a lightly floured surface into a rectangle shape, then spread the wild garlic pesto evenly over the pastry, leaving a small margin around the edges.Step 4.
Place another sheet of puff pastry over the top of the pesto-covered pastry. Press down gently.Step 5.
Cut the pastry into strips about 5 cm wide. Twist each strip several times and lay them on the prepared baking sheet, pressing down the ends to prevent untwisting.Step 6.
Beat 1 egg and brush it over the top of each twist to give them a golden finish.Step 7.
Bake in the preheated oven for 15-20 minutes, or until puffed and golden brown.Step 8.
Allow to cool slightly on a wire rack before serving. They can be enjoyed warm or at room temperature.
