METHOD
Step 1.
Chop all the vegetables into roughly equal-sized pieces.Step 2.
Combine olive oil, balsamic vinegar, garlic, basil, salt, and pepper in a bowl. Stir until smooth.Step 3.
Add the vegetables to the bowl and mix to coat them with the marinade. Leave in the fridge for at least 30 minutes.Step 4.
Thread the marinated vegetables onto the skewers, alternating the types for variety.Step 5.
Cook the skewers on a hot barbecue for 15-20 minutes. Turn them regularly to ensure they cook evenly.Step 6.
Serve the skewers hot with a drizzle of the remaining marinade.
