METHOD
Step 1.
Wash and slice lemons into thin rounds, removing any seeds.Step 2.
In a large pan combine water and sugar. Bring to a boil over medium heat.Step 3.
Add the lemon slices to the pan and simmer for about an hour, or until they become translucent.Step 4.
Using a slotted spoon, remove the slices and place them on a wire rack to cool and dry. They will become more firm as they dry.Step 5.
Store in an airtight container in the refrigerator.
